I couldn't think of a better ambassador for New Hampshire than you, with your warm spirit, avid curiosity, and genuine regard for others.  I salute you!

On the mashed potato sandwich, I have to say (as a fellow starch fan) that I've considered this, but never carried through.  But one of my favorites is a base of toast topped with mashed potatoes (plenty of butter and salt) topped with gravy -- not too far off the Japanese version.

I'll be heading to the Japanese gardens in Portland, OR, this month.  Your observations of the Japanese spirit of harmony and connection will add to my appreciation.
